His Fried Chicken chocolate contains actual pieces of crackling made from deep-frying chicken skins. The addition of smoked sea salt and blond chocolate balances the savory with the sweet. Each bite-sized square packs a unique filling encased in a decorative chocolate shell. Who would have thunk it? Well, that would be Memphis resident Philip Ashley Rix.
Phillip is changing the dessert world with his wildly imaginative luxury chocolates with unique blends like Sweet Potato, French Bleu Cheese, and Bacon Caramel Shortbread just to name a few. An authentic ambassador of taste, Phillip has curated dining experiences at the James Beard House in New York City, created tens of thousands of chocolates for Hollywood’s elite at the EMMYS, GRAMMYS, OSCARS, and is currently offering nationwide virtual chocolate tastings with wine pairings to bring his unique spin on chocolate to consumers around the world.
With an international following and high-profile clients like FedEx, Disney, and A-list celebrities like Stevie Wonder, Phillip provides a chocolate experience like no other. He recently launched his special edition 50-piece “Taste of America” collection featuring custom flavor profiles for each state.
Born and raised in Memphis, Philip spent his childhood tugging at his grandmother Jean’s apron strings itching for a chance to try his hand in the kitchen. While working as a corporate marketing and sales executive, first for FedEx, and then for Apple, he spent years thinking about opening his own business. Once the chocolate idea hit him in 2007, it became an obsession. Phillip Ashley Chocolates was established with the desire to design and develop the finest, most unique chocolate experience. Phillip’s chocolates are available for purchase online, shipped throughout the country and internationally.
When Phillip’s not crafting his next masterpiece, Phillip lends his time to St. Jude Children’s Research Hospital and will soon be launching the Phillip Ashley Foundation, focused on supporting healthcare for kids through food and providing guidance for small businesses.
